Do you like coconut? I love me some coconut, recipes made with coconut, coconut flavor, coconut drinks, etc.. :D I find that people generally fall into 2 categories- love it or hate it. Don't find too many in between. Where do you stand?

Love the milk, but ain't excited about the meat. (Although I use it regularly in cookng).

Since most of my family are not fans, I don't us it often.

I'm one of the few freaks who can take it or leave it. I like it okay. My wife, on the other hand, is a coconut freak. I have to bake her a coconut or german chocolate cake every year for her birthday. The week before, she tells me which she wants that year, and I get the ingredients and bake it for her. She loves them in layer bars, pina coladas, candy, pretty much anything.

I like coconut cream cake. YUM! I also like pina coladas.

One of my face lotions --the one containing SPF -- has a coconut fragrance.

I simply cannot eat coconut. Taste, texture, whatever . . . blech! I am like Linus. Guaranteed that I will pick the one coconut candy out of the whole box.

If you break it in half first to check, I'll take the coconut one off your hands. (Who am I kidding - I'd probably take it even if you bit off a bit and found the coconut.)

Devildeac - did you post the sour cream coconut cake recipe in the recipe thread? If not, please add it. :D

My mom makes these great date balls that are rolled in coconut and I've had other coconut laden treats, but overall, I could live the rest of my life without ever experiencing a coconut again.

My wife has an excellent one. It's the one she has me make for her birthday. I could post it, and the german chocolate one (people have told me that it's their favorite german chocolate ever), if anyone's interested. She also makes the best pecan pie ever.

Anyway, what I was going to say is, I wasn't at ALL surprised to find out that hc5duke liked coconut. In fact, the second I saw that he had posted in this thread, I said to myself, "I bet I know which side of this debate HE'S on." :) Most of my friends are asian, my parents' friends are mostly asian (my mom's godchildren are all asian). I've known people from Vietnam, Singapore, Korea, Japan, China, Cambodia, Taiwan, Thailand, and Malaysia. I've probably been at least good acquaintences with about 100 asians and people of asian decent or part asian in my life. I could name MAYBE five of them that weren't cookoo for the coconut. It seems to be in the genetic makeup or something. ;)

Devildeac - If Mrs. Devildeac will share, please post that one. My niece wanted a cake with coconut on the frosting and I was looking for ideas. I went with a white velvet cake with Frangelica (sp?) frosting dusted with coconut. I considered Amaretto frosting - so I had fun sampling the two and then sampling again by dipping coconut into the liquer to decide on the frosting flavor.

I had a cup of cocount ice cream at a fair at a mall in the area. Delicious on a warm, sunny day.

You needed more options in your poll as it depends how it is used.

I put in in curry and love it. If it is included in a chocolate bar it can be good - but if it is the only filling in the chocolate bar then I don't like it. Not a fan of coconut cream pie. When used in various baked items, I'm fine with it.

Agree with the Gelato in Venice - add a scoop of chocolate and it's even better.

Funny you should say that. I had that combination every day we were there. My wife, who loves chocolate, but didn't think the combo sounded very good, tried it and kept mooching out of my bowl...

While I can't eat it, my mother loves it. So, I baked her a cake a couple of years go for her birthday. The recipe is from Southern Living (where I get many mighty good recipes). It's an almost spongecake with lemon between the layers with white icing and coconut sprinkled all over.

I like coconuts. You can break them open and they smell like ladies lyin' in the sun.

Actually I can't take 'em. Don't like the taste and if bitten by accident, it takes half the day to spit out all that pulp.

I've been delinquent in posting here... random thoughts:

Coconut chicken fingers/tenders- mmmmmm good stuff.

Coconut cake recipes MUST be posted.

I had frozen yogurt with fresh strawberries and shredded coconut for lunch. :D
